The Lockdown and Other Things of June

Sorry so quiet lately. My mother-in-law was in town this weekend, and we were also puppy sitting for friends. Full house! The weekend was lots of fun, but I’m quite beat, and I’ve tried to take naps yesterday and today and Oliver woke me up both times just as I was drifting off. That cat. If he weren’t so goshdarn cute…

In other news, several of the plants in the garden are blooming. The cucumber, squash, two tomatoes. The cantaloupe, of course. The grape tomato even has little baby tomatoes starting to pop up. So, I guess I’m not killing everything yet.

So, after looking over our finances recently, Jesse and I decided to go on “lockdown” for the month of June to see if we can get our spending somewhere near what we’re actually bringing in. Nothing goes out except for gas, food, and bills. We’ve allotted some money for eating out, and we are planning to see the new Harry Potter movie in theaters. But, save for those things, there will be no unnecessary (or even a-little-bit-necessary) spending here for June. Then, we’re going to reevaluate and see how urgent my job search will get. That means I’ve got one month of writing I can squeeze in.

We’re back on our “poor people” diet and grocery budget, so the beans and rice recipes will resurface. I have had some success with cornbread recently, so there’s that. Managed to badly mess up a pan of biscuits while my mother-in-law was here. Thought I had self-rising flour, but I didn’t. Then I ran out of the flour I did have and tried to substitute with spelt flour. Learned that biscuits should not be winged. At least, not by me.

And now I’m hungry, so it’s off to the kitchen to whip up something for dinner. I’m thinking of being lazy and pulling the leftover chicken soup from the freezer. Maybe a pan of cornbread to go with it…

    I have yet to succeed at making biscuits (that I want to eat with any enthusiasm) from scratch. Also, I saw a bumper sticker on my way to work that got a good shout of laughter from me: “Cats not brats!”

    First, yay for blooming plants! Soon you will be able to supplement your poor people diet with fresh fruits and vegetables, which will make it much more exciting. You can get creative with the recipes. Second, I can’t make biscuits either. Weird. Third, stupid cats! Having a kitten in the house is very overwhelming, but his cuteness is what keeps him from being thrown out the window :) And last, Sabrina, that’s the best bumper sticker ever! I want one!

    S: I need that bumper sticker too! As for biscuits, I tried again yesterday (with the proper ingredients) and they turned out okay. Not anything to do backflips over. I’ll keep trying to see if I can get the consistency a little better. More flaky and soft. Mine were a tad on the spongy side.

    Y: Yay, bring on the veggies! Hurry up, plants! You know, I really believe Oliver knows exactly how cute he is. He really dials it up sometimes, and he’s smart to do it. Because otherwise…jeez, these cats kill me sometimes. Good luck with your kitten!
